Artichocke Pesto

tonight for dinner we made artichocke pesto. It's really quite tasty. Here's the recipe

Artichocke Pesto

1/3 cup oil
between 12-14 canned artichockes
1 cup of parmesean cheese
1 garlic clove

blend all the ingredients in a food processor or in a blender.
